Preparation time: 15 minutes, plus 20-25 minutes to cook
4 large free-range eggs
2 ripe tomatoes, diced
1 Tbsp sugar
Tbsp soy sauce
1 large garlic clove, finely chopped
100 mL of water
50g cassava flour for stabilizing
Sunflower or vegetable oil for stir frying
Cooking Instructions:
Place a wok over high heat and add some vegetable oil while swirling to coat sides until it is hot.
Add in the beaten eggs slowly into the wok when the oil is hot. Stir fry the eggs for 10-20 seconds until it sets and turns yellowish.
Turn off the heat and cut the eggs into chunks by using the wok ladle. Pick them out of the wok and place them into a plate.
Leave some vegetable oil inside the wok and swirling to the coat sides again.
Turn on the heat by adding in the finely chopped garlic and stir with the wok ladle until it is light brown.
